Balhyo-cha refers not to a single tea type but to a category defined by its unique post-fermentation method, known as Wet Piling. In this process, partially oxidized leaves are heaped or stored in a controlled, warm (104-140°F) and humid environment, meticulously managed by the tea maker. This setting encourages natural microbial fermentation, where bacteria and yeasts transform complex starches and proteins into simpler sugars and amino acids. The result is a dark, smooth, earthy tea with rich umami characteristics, echoing traditional Korean terroir and culture, and comparable to Sheng Pu-erh. Its aroma and flavor unfold with complexity across multiple infusions, reminiscent of finely roasted single-estate dark chocolate.
