Wild Tree Assam comes from a small family garden in Upper Assam tended by retired schoolteacher Rebo Gogoi and his sons. The bushes were grown from the seeds of wild Assamica trees gathered in the forests of neighboring Nagaland, then raised naturally without synthetic pesticides or fertilizers. In 2015, the family built a tiny factory on the property, and today they wither, roll, and oxidize every batch by hand in very small lots. The long, twisted leaves are never cut by CTC machines, so the cup is smooth and layered rather than harsh while still delivering full-bodied flavor. Expect malt, dark berries, and sugarcane, with elegant tannins that add body without bitterness. It's everything you want from a morning Assam, made with far more care, and it's just as good on its own as with a splash of milk.
