Wuyi Yancha
As Fall arrives, we turn our attention to the Wuyi Mountains for the release of this year's Yancha harvest. Yancha production requires patience and is only released at the close of autumn. Low oxidation and high roasting to caramelize sugars, but keeping the amino acids intact to produce exquisite flavors of flowers, nuts, syrup, molasses, and a pungent aroma.
