Tea was picked from the Lu Shan Feng Tang Mountain at an altitude of 1400 meters, from +100-year-old trees, and was stored dry in Nan Ru Shan, where it was processed. Something magical happens when storage conditions are just right and Sheng and Shou are stored together. The microcosm of yeast that coexists in a room filled with different cakes transforms the taste and finish of every bing. Chang Yun Seven is a product of this tiny universe, evident in the mysterious floral aftertaste rarely found in fermented Shou cakes. With time, it has become incredibly smooth and delicate, far from the typical musty, moldy cakes that have come to represent this style. We love finding teas that can help you reassess any stigma a tea type might have and lead you to a humbling new experience.
