The leaves are hand-harvested to high-quality standards, requiring 'one bud with one or two tender leaves.' The process involves essential steps like hand-pan roasting (sha qing) at 70–80°C and meticulous hand-shaping in a wok at 220°C (hui guo) to produce the characteristic flat, spear-shaped leaves. Such artisan care significantly influences the final flavor, resulting in a tea that is both complex and well-balanced.\u003c\/p\u003e\n\u003cp\u003eAuthentic Shi Feng Longjing is highly rare. The protected Shi Feng terroir has a very small total cultivation area, with a renowned pesticide-free farm growing just 4,000 square meters in the core ecological zone.
