Ming Qian Long Jing 明前龙井
Picked on March 26 before the Qing Ming festival combining hand made and machine made techniques. Long Jing aka "Dragon Well" is arguably the most famous green tea in China. Historically, it originates from Hangzhou but since that city has been developed and tea growing land has been replaced with buildings. However, the original cultivars and the tradition of pan-firing Lung Jing has not. Current technology implements infrared ovens that allow the producers to retain all the nutrients, flavors, and aromas intact after the tea has been skillfully pan fried by hand. Green teas that are picked in March are highly sought after because they will have more natural sweetness, fuller taste, and pungent aromas.
