Across our travels, we were frequently greeted with a chilled, beaded glass of iced tea—a delightful welcome upon arrival! Mizudashi cold-brewing and chilled tea allow one to make a pitcher that can last a few days, perfect for offering to friends or just to beat the summer heat. 1. Kyobancha 2023 Harvest
Enduring and beloved, Bancha is a style of Japanese tea made from the remnants of trimmed branches, stems, and leaves. One type of Bancha, Houjicha, is widely recognized, yet its distinct regional varieties ensure a broad range of flavors. Kyoto's renowned Karibancha, for example, is crafted with hand-unrolled leaves plucked after the Ichibancha sencha harvest, boasting a full-bodied umami flavor, sweetness, and pleasant pungency. After being dried and unrolled, the leaves are pile-burnt for an extra smoky, resinous essence – delightful when served chilled. With every sip, we are reminded of the classic teahouses of Kyoto.

2. Chiran Fukamushi 2023 Harvest
Fukamushi is a deep steamed style of processing sencha which results in a beautiful deep emerald color and pungent aroma, perfect for cold brewing during sultry summer days. When cold brewed at lower temperatures, Fukamushi shines forward with a deep sweetness and array of tropical flavors created by the warm Kyushu sun.
