How to brew our tea:
White, Green, Tisanes of leaves, buds, or flowers
Simmer water (90°C/195°F) slight movement, small bubbles appear
Remove from heat and allow to rest
5g (1 tbsp.) of tea for an 8oz vessel
Steep less than 30s
Re-steep 2 - 3 times
Matcha
Simmer water (90°C/195°F) slight movement, small bubbles appear
Remove from heat and allow to rest
Sift 2g (1 tsp.) of tea into your favorite bowl
Add 3oz of water
Whisk into a fine froth
Oolong Tea
Slow boil water (96°C/205°F) steady movement, noticeably larger bubbles
Bring heat to lowest setting
5g (1 tbsp.) of tea for an 8oz vessel
Steep 30s
Re-steep 4 - 6 times, incrementing 5-10s
Black Tea
Slow boil water (90°C/195°F) steady movement, noticeably larger bubbles
Bring heat to lowest setting
5g (1 tbsp.) of tea for an 8oz vessel
Steep 30s for neat, 60s with milk
Re-steep 2 - 3 times
Puerh Tea
Slow boil water (96°C/205°F) steady movement, noticeably larger bubbles
Bring heat to lowest setting
5g (1 tbsp.) of tea for an 8oz vessel
Steep 10s and discard first rinse
Re-steep, incrementing 5-10s
Tisane of fruits, stems, twigs
Slow boil water (96°C/205°F) steady movement, noticeably larger bubbles
Bring heat to lowest setting
5g (1 tbsp.) of tea for an 8oz vessel
Steep 60s
Re-steep 4 - 6 times, incrementing 5-10s
